INGREDIENTS:
4 Pounds sweet potatoes, peeled and cut into 1-inch cubes
10 tablespoons unsalted butter (or vegan spread)
3 to 4 tablespoons (45 to 60 ml) Crown Maple® organic maple syrup (Amber Color, Rich Taste)
½ Cup whole milk (or non-milk alternative such as Almond milk)
2 Teaspoons salt, plus more to season finished dish
½ Teaspoon black pepper or to taste
Crown Maple glazed walnuts (optional)
DIRECTIONS:
Bring a large pot of water to boil. Add the sweet potato cubes and cook, uncovered for 15-20 minutes, stirring occassionally. Potatoes are ready when tender.
As the sweet potatoes near the end of cooking, take a medium sauce pan and melt the butter over medium heat. Continue stirring the melted butter until you see a slight brown color emerging. Add the maple syrup and stir to combine. Turn off heat.
Drain the cooked sweet potatoes and add them to a mixing bowl. Add the milk, salt and pepper, and the butter-maple from the sauce pan. Use a hand mixer or stand mixer on medium to low speed to mash the sweet potatoes and combine all the ingredients. For more rustic presentation, mash with fork and stir to combine ingredients.
Transfer mashed maple sweet potatoes to serving dish. Add whole or chopped maple glazed walnuts (optional) on top for added texture and flavor enjoyment.
